Per Capita Consumption of high fructose corn syrup
The U.S. Department of Agriculture compiles data for the per capita consumption of high fructose corn syrup as well as the availability of high fructose corn syrup. However, per capita consumption and availability data are distinctly different. USDA estimates 2007 per capita high fructose corn syrup consumption, adjusted for loss during transport, processing and uneaten foodwhich presents a more accurate figure of what we eatwas 40.1 lbs per year.(15) Per capita sugar consumption in 2007 was 44.2 lbs per year.(14)
USDA high fructose corn syrup availability data reflect the deliveries of high fructose corn syrup to food and beverage manufacturers. Availability data do not take into account loss during transport, processing or uneaten food.
As high fructose corn syrup consumption increased, sugar consumption decreased. USDA data shows that the per capita use of high fructose corn syrup in the U.S. food supply was matched with an almost equal decline, on a one-to-one basis, in the per capita use of sugar.
